40ml White Cuban Rum
10ml Lime Juice
Top Brut Champagne
Glass – Method – garnish – ice
Highball
Shake / Top Up
Lime Peel
Clear Ice
Shake / Top Up
Lime Peel
Clear Ice
To assemble and serve
Pour all ingredients except the Champagne into a shaker filled with ice cubes. Shake and Strain into a highball glass over a spear of ice. Top with Champagne and garnish with a lime peel. Serve.
